Fascinated by the marine world, my interest in the seaweed was born 15 years ago through the micro-algae such as spirulina. Their nutritional profile is exceptional, as are macro seaweed.
But the element that triggered my passion is the range of flavors that can be found in seaweed.
At that time, the idea of eating seaweed disturbed a large majority of us, but the rich flavors, combined with this amazing nutritional profile, have led me to tell me that we could not ignore that.
The adventure started 13 years ago alongside chefs and direct contact with the public of organic markets and food fairs.
